Ethiopia is considered the cradle of coffee and is famous for the fact that Arabica coffee grew wild in the forest in the Kaffa region. Today, the country shows a typical "small product" structure. This means that a large number of farmers with usually small crops harvest their coffee beans and take them to centralized washing stations instead of processing the coffee on their own equipment.

At washing stations, grains are carefully sorted before processing.
Only fully ripe and red cherries enter the mill to ensure uniform and consistent quality. After that, the skin and pulp are removed from the beans. The beans are then placed in fermentation tanks for 24 to 36 hours, depending on weather conditions, where the remaining pulp is subsequently removed during the fermentation process. Then the coffee is finally washed and sorted in the washing channels.

After that, the high moisture content in the grains decreases to about 12%. This takes place under the African sun on so-called "African beds" for 10-15 days, where the coffee is carefully scooped up several times a day. This fine coffee was produced by smallholder farmers in Guja, a zone in the Oromia region of Ethiopia. Generally, farmers in this area diversify what they grow on their land by planting coffee plants along with other crops.
