Pink Bourbon is a relatively new coffee variety that has quickly made its mark in the specialty coffee world and coffee competitions. Its exact origin is still debated, with some sources claiming it is a natural hybrid of Red and Yellow Bourbon, while recent genetic research suggests that Pink Bourbon is a derivative of one of the indigenous Ethiopian varieties. Regardless of its origins, what remains indisputable is the unique flavor profile of this variety. It is loved for its exceptionally rich flavor characteristics, complex acidity with notes of exotic fruits, and near-perfect balance!

Pink Bourbon beans contain genetically higher sugar levels than other varieties, making them ideal candidates for experimental processing methods. This is why Señor Benitez chose Pink Bourbon for his famous two-stage anaerobic fermentation with thermal shock.
